What is Matcha?

Matcha is a delicious tasting, powerfully nutritious green tea that originated in Japan and has been consumed for hundreds of years. It comes from the same plant as normal green tea (Camellia Sinensis) but is grown and harvested a bit differently. Regular green tea is cultivated and harvested in the sun, whereas Matcha green tea is moved into the shade for a period of time prior to harvesting (usually about three weeks). The loss of sunlight means that the plant responds by upregulating the amount of chlorophyll in an attempt to absorb more sunlight. This results in a higher antioxidant content, brighter colour and more balanced flavour. Matcha naturally contains some caffeine, but it comes as part of a comprehensive and complimentary nutritional profile that both energises and soothes.

‘Tired But Wired’ vs ‘Calm But Alert’

The way caffeine boosts energy is by rapidly crossing the brain barrier and blocking adenosine receptors, which blocks the feelings of sleepiness, and raises your body temperature, heart rate and breathing rate. This is a bit like revving the engine when you’re getting low on fuel. Matcha contains some caffeine that is also able to block the adenosine receptors, but the effect is more gradual and it also contains the amino acid L-Theanine, which can cross the brain barrier and promote relaxation as well as mental alertness. Matcha is like driving more economically so that you can make it to the next fuel station.

Foods to include.

A rainbow of fruits and vegetables - rainbows made of edible plants are nature's way of letting us know that we are getting a great variety of vitamins, minerals, beneficial phytochemicals and fibre. It’s super pretty too, and we eat with our eyes!

High quality proteins, including organ meats - High quality proteins including eggs, fish, meats, legumes and grains are essential to include in your kid’s diets. This will ensure they are getting plenty of all the essential amino acids for all that growing they need to do. Organ meats (particularly liver) are also great to include, as they are a highly concentrated reservoir of essential minerals. Keep in mind that you only need one small serve of organ meats a week - it’s easy to overdo organ meats because of their nutritional potency. In this situation, less is more.

Healthy fats - Including good sources of healthy fats like oily fish, avocado, fresh olive oil, nuts and seeds will help reduce inflammation in little growing bodies and support brain development.

Foods to be mindful of

Salt - Being mindful of your child’s overall salt intake is important for a few reasons. A diet too high in sodium can increase blood pressure, put more pressure in little kidneys and develop taste preferences for saltier, more processed foods. You don’t need to avoid sodium all together (sodium is still essential in the diet). Just make sure it’s consumed in moderation.

Highly processed foods - Ensure that highly processed foods only make up a very small portion of your child's diet. We get it, some processed foods are unavoidable and trying to ban them completely would be quite isolating. Just make sure wholefoods make up the majority of your kid’s diet.

Some fish - Large fish, high up in the food chain (like shark, marlin and swordfish) can be high in mercury. This is something to be particularly wary of in small children because their little bodies will be more affected by it. Mercury is toxic and can interfere with brain development. Don’t panic if your children have a little bit - just try to limit exposures so that mercury doesn’t build up in their bodies. Low mercury, high omega 3 fish like salmon, sardines, trout and mackerel.

Tips for nurturing a happy long term relationship with food

1. Free reign of the snack draw

Ok hear me out. I’m not saying your little 3 year old gets free access to unlimited lollies and chippies all day (we all know that bad choices would be made if that was the case). Have a draw and a shelf in the fridge that your child has free access to during the day and fill it with healthy snack options. Encouraging some autonomy over food from an early age helps kids to feel confident when making food choices and gets them more in tune with their bodies and nutritional needs. Need some snack inspo?

2. Get kids included in food preparation

Being involved in food preparation helps kids of all ages build healthy relationships with food. Little kids love being included and they are far more likely to try new foods if they were involved in the preparation. 3. Food isn’t just for eating

Including food in your day, outside meal time, can have a great impact on how kids feel about food overall. Encourage curiosity, enthusiasm and imagination by playing games that include food, reading books, and having happy conversations.

4. Mix it up

Offer a variety of foods so that your child gets used to seeing foods that are unfamiliar. Even if these new foods are regularly rejected at the start, it’s great practice for kids to be exposed to different foods. Long term this broadens their horizons, and makes them much more flexible human beings.

5. Don’t offer replacements

I know this one is hard! Your kids aren’t eating dinner, bed time is fast approaching and you really just want them to eat SOMETHING! Imagine believing in something so deeply, you sell your home, move into a rental with your entire family (all 8 members of them), and work two jobs for almost 10 years to back your vision. And now your vision is nourishing over a million people every year. This is the story of Nutra Organics.

Rick Harrison (co-founder) welcomes us to her farm to talk about heritage, health, and her incredible regenerative farm. 25 questions for 25 years of Nutra Organics.

In 1998, Mark & Darlene Powell started Nutra Organics on the kitchen table of their family home. Their passion for wholefoods came from their heart and soul - their family. Studying naturopathy, they might have been labelled certified hippies back then, but they knew the best stuff for you came directly from Mother Nature. From wearing garlic in their socks to bed when they got sick, to eating mung bean sandwiches for lunch, everything was about using what the earth had provided for extra support.

However there came a point when they realised that their wholefood diet wasn’t giving them everything they needed nutritionally. Due to modern agriculture, soil quality significantly deteriorated over the years (and continues to do so) - and food just doesn’t contain the same amount of nutrients that it did 100 years ago. Resolved to do something about it - Mark & Darlsy sourced the absolute best quality superfoods they could get their hands on, that delivered a potent spectrum of nutrients while tasting delicious, and mixed together their first iteration of Super Greens + Reds on their kitchen table.

After feeling an incredible difference in their health and vitality, their community became intrigued & hooked on this superfood concoction after experiencing the difference themselves. Thus, Nutra Organics was born.

Mark worked full-time (at a biscuit factory— ironic right?) while also working full-time on Nutra Organics, door knocking on the weekends to continue to spread Mother Nature’s goodness. And don't think Mark was a one-man show. Oh no, this was a whole family affair! Everyone was involved—Darlsy, Ricki (eldest daughter), and Brit (youngest daughter).

Ten years passed, and passion still fueled the family's mission, creating products that their local community and friends needed. In 2010, they invested everything they owned into the business, selling their family home and moving into a rental all together (the family had grown to six adults and two kids). One big happy family, right? Most of the time!

The next three years were met with the hurdles of newborns, developing their kids' nutrition & fitness range, supply chains, manufacturing—making just enough to break even every year. But to this family, the small wins were all they needed. Over time, they found that every new customer they served would always come back. And if that's any sign that they were doing something right - they had thousands of loyal customers.

After learning the ropes of doing business for 13 years and growing very organically, with no money spent on advertising up to this point, Nutra Organics started to quickly snowball and run freely on its own legs. The word-of-mouth from loyal customers had been multiplying tenfold.

Focused on solving their customers’ problems with more new products that a) taste amazing, b) were easy to incorporate into everyday busy life, and c) had real health benefits, their trailblazing broth & collagen range were born in 2015 & 2017 - Australia’s first range of bone broth powders & targeted collagen supplements. Selling out at least 10 times in the first few years, customers couldn’t get enough!

Benefits of a Low FODMAP Diet

So what is a low FODMAP diet you ask? By the end of this blog we hope to shed some light on the benefits of a low FODMAP diet and who a low FODMAP diet can help. It can in fact feel like you need a literal map to understand all the diets and trends these days, but here at Nutra, we praise a wholefood/holistic diet, and you will rarely hear us talk about “diet culture.” However, there are certain diets with tons of research behind them that are specific to certain outcomes and beneficial for certain people; a low FODMAP diet is one of those.

What Does Low FODMAP Mean?

FODMAP stands for Fermentable Oligosaccharides, Disaccharides, Monosaccharides and Polyols, it’s a mouthful right? In layman's terms, these are simply short-chain carbohydrates (sugars) that the small intestine typically doesn’t absorb well. These foods that don’t absorb well often cause gas, bloating and a range of other uncomfortable symptoms for people who suffer from IBS.

The four different FODMAP categories include:

  1. Fermentable Oligosaccharides: Fructans (which are found in onions, garlic, artichokes, wheat products, galactans (which you can find in lentils, beans, broccoli, brussels sprouts, and most products containing soy).
  2. Disaccharides: The biggest carrier is dairy products, hello cheese, ice-cream, yoghurt and milk.
  3. Monosaccharides: Monosaccharides are found in fruits, due to the fructose content. However not all fruits are guilty, as some fruits have equal amounts of fructose and glucose and are more easily tolerated.
  4. Polyols: These are sugar alcohols typically found in sweeteners made from xylitol, lactitol, maltitol and sorbitol. There are some other natural sources that belong in this category too like cherries and mushrooms.

Benefits of a Low FODMAP Diet

Limiting foods that contain FODMAPs can ease symptoms of IBS and should only be followed for this purpose and for a time. This is because the above foods containing those compounds are harder to digest, and are not completely absorbed, so when they reach the intestine they ferment and can cause gas, pain and bloating. According to Dieticians Australia, IBS affects 30% of Australians, yikes! If you experience gas, pain or bloating, it’s important to have your symptoms properly diagnosed before following a FODMAP diet, always make sure you see a professional for a proper diagnosis.

How to follow a FODMAP Diet

The good news when it comes to following a FODMAP diet is that limiting FODMAPs is only for a time. So yes, your Friday afternoon cheese and crackers with a sparkling glass of vino is just on hold for now. The first step however, is elimination, this stage should last for a minimum of two weeks and a maximum of six weeks. After this time you can slowly reintroduce foods - this part should be planned out by you and your dietician. This process will allow you to figure out what foods are causing you discomfort as you slowly reintroduce foods. From here your dietician will be able to help you in determining how much of those foods you can eat to reduce your symptoms.

Okay, time to take stock (pun intended) on what the heck the difference is between broth and stock! The debate between broth and stock is one of those conversations that seems to confuse the best of us and even the most clever of cooks. We’re here to put an end to the confusion between broth and stock once and for all, so you know the difference between broth versus stock, some common misconceptions and the different uses and benefits of broth and stock.

Are broth and stock the same thing?

There is quite a lot of confusion out there about whether broth and stock are the same thing, and although you can use broth instead of stock (we’ll get into that in a moment) there are a few key differences. There are many articles that will tell you that stock is often made from bones and broth is made from meat, it’s all relative to the brand and if it is simply broth or bone broth.

Our bone broth powders (chicken and beef) and bone broth concentrates are made from primarily bones. Chicken bones or beef bones are added to filtered water and apple cider vinegar (to maximise nutrient extraction) and then slow-cooked for hours. The broth is then strained for impurities and then the fat is skimmed off the top. Depending on the flavour profile we will then add the highest quality and all-natural flavours, herbs and spices. For the bone broth powders, it is then gently refractance dried into a powder, taking care to preserve the nutritional profile.

Stock commonly bought from the supermarket isn’t slow-cooked and is often packed with fillers, sugar, glucose, colours and preservatives. Stock is often made from beef and sometimes bones and vegetables. While so much information out there will tell you broth is made only from meat, make sure you are reading the labels as broth and bone broth are quite different. If your main takeaway from this is to always read the label, look at the quality, avoid nasties and look at the nutritional value offered - then you’re on the money, this is where the main difference will be.

Can you use broth instead of stock?

The short answer here is, yes! Broth and stock are pretty much interchangeable, so where you would normally use stock in soups, stews and gravies, you can use bone broth powders and concentrates and enjoy all the nutritional benefits as well as the delicious flavours that enhance your cooking.
