These loaded sweet potato boats make an awesome, nutritionally well-rounded vegan snack or meal. It’s a really easy recipe to throw together and it combines heaps of flavour and nutrients.

Using sweet potatoes for the base provides extra fibre, calcium, iron and potassium compared to white potatoes. They also provide a good source of beta-carotene (which gives sweet potatoes their orange colour and is the plant based equivalent of vitamin A).   

The jackfruit and chickpea topping provides a combination of carbohydrate and protein, avocado (which we sing the praises of regularly!) brings healthy fats, red cabbage is rich in anthocyanins (a powerful antioxidant), and pepitas add magnesium and iron. We’ve also added in our Vegan Nutritional Yeast Flakes which add a delicious savoury flavour and heaps of essential micronutrients, including all of your B vitamins, calcium, iron, zinc and potassium.

This rustic nutty salad provides a wide range of vitamins and minerals, as well as a delicious combination of flavours, macronutrients and textures.

Buckwheat is a great base for this salad, with one cup containing 100% of your recommended daily intake of Niacin and Magnesium. Fun fact - Buckwheat is not actually related to wheat at all and is a seed rather than a grain. It has a gentle nutty flavour and is about 13% protein.  

The cashews and almonds provide healthy fats proteins and slow releasing energy.

Both the rocket and parsley provide a great source of Vitamins A, K, C and Folate. Parsley also contains a bioflavonoid called Apigenin which is associated with reduced anxiety.  Pumpkin and broccoli both provide a source of Vitamin A which is great for eyesight and skin, and the purple cabbage contains anthocyanins which are great anti-inflammatory antioxidants.

We absolutely love this salad. It's really easy to prepare but looks and tastes super sophisticated because it combines some seriously delicious flavours and textures. It's light and fresh but also comforting and wholesome, the perfect in-between season meal when you just don't know what you feel like eating (or how to dress).

We have used Quinoa as our base for this salad. We don't get tired of this superfood as it contains a complete protein profile and is packed with micronutrients. The asparagus provides a source of folate, vitamin C, vitamin E and iron, plus most of your B vitamins. It's a great source of fibre, and antioxidants (including some awesome polyphenol call quercetin). Peaches provide a source of vitamin C, Niacin and antioxidants, but most importantly, they taste amazing and chargrilling them brings out delicious caramel tones (and makes you look really fancy!). Pepitas have been included to provide some crunch, but also for their added protein, vitamins and minerals. And obviously, goat's cheese is added because it's goat's cheese - enough said! (But if you must know, it also provides complete protein, calcium and vitamin A).

Some of the superstars of this dish include:

  • The roasted pumpkin, which provides you with complex carbohydrates and beta-carotene (vitamin A) which supports skin and eye health.
  • Avocado, which is high in healthy fats which are great for skin barrier function and are a source of the vitamins E, K, and A.
  • Spinach, which is rich in folate (essential for healthy cell growth), high in fibre (great for healthy bowels and waste elimination), and high in iron! In this recipe, we have included lemon juice, which helps to convert the iron into a more bioavailable form, and Iron is essential for oxygen transport and feeds tissues (including skin, hair, and nails).
  • Broccoli, which contains vitamin C, folate, vitamin A, vitamin K, iron, manganese, and potassium. It also contains the powerful antioxidant called sulforaphane which improves oxygenation of the skin, promotes hair and nail growth and it anti-inflammatory.
  • Tomatoes, which provide a heap of nutrients, but particularly the skin-protecting antioxidant lycopene. 
  • Hemp seeds, which are a complete protein and provide omega-3 and omega-6 fatty acids. Speaking of complete proteins, the combination of rice and legumes also ensures all of your essential amino acids are covered!
