1. Combine chicken, garlic, chicken concentrate, honey, ground coriander and chilli powder in a bowl.
2. Fry both sides of the chicken in a hot pan for 1 minute or until golden using 1 tbsp olive oil.
3. Cook Chicken in the oven at 180C for 30 mins.
4. Meanwhile, combine ½ an avocado, basil, dill, chives, garlic, â…“ cup of olive oil, lemon juice, yoghurt, ½ cup baby spinach and a pinch of salt in a blender. Blend until smooth and creamy.
5. Serve chicken on a plate or platter, drizzle over pan juices and Green Goddess sauce, top with pink pickled onions and garnish with herbs.
6. Serve with remaining baby spinach, sliced avocado & feta.
